Vietnamese Pizza- a hidden gem of a snack

Vietnamese Pizza - a hidden gem of a snack that costs less than $1 to make! This recipe features a glorious, crispy crust made by layering three sheets of rice paper. Variations include a “Big Mac” style using burger patty and a special sauce.
Prepare your ingredients beforehand as this cooks relatively quickly. Slice your chosen protein and veggies. To make the crispiest crust, layer one dry sheet of rice paper, then one completely wet sheet, and top with one more dry sheet. You need to work fast as the wet sheet softens quickly. Immediately place the layered rice paper on a dry, non-oiled pan on medium heat. Crack an egg onto the rice paper and lightly stir to coat the entire front of the crust. Add your scallions and protein, and then the cheese. Swirl on your desired sauces (Chinsu, Kewpie, Sriracha) and add the fried shallots (optional) and lettuce. Let it slowly crisp up. It will be done once the bottom is completely opaque and white. For extra crispiness, let it turn a bit more brown. Enjoy!
