Fancy Schmancy Potatoes

1. Preheat oven to 400F.
2. Carve each potato with a knife or use a biscuit cutter. Keep them 1.5 inches tall and about 2-3 inches wide.
3. Spray some avocado spray oil into an OVENPROOF pan and sear over medium heat both sides of the potatoes for about 4-5 minutes on each side or until golden brown.
4. Add the butter and rosemary and baste the potatoes for 3 minutes, then add in the stock.
5. Transfer the pan to the oven and bake for 30 minutes or until all the stock has absorbed into the potato. At the 10 min mark, remove the pan from the oven, baste the potatoes and add back to oven.
6. Bake until all the stock has absorbed leaving just butter, then baste once more before garnishing with loads of flakey salt! Enjoy peeps 🥰
