Vietnamese braised pork belly n quail eggs- thịt kho trứng
30 mins prepServes 4
It’s almost Lunar New Years, so OBVIOUSLY I had to remake this iconic dish. Thịt kho trứng is my childhood ride or die dish 🔪 it’s simple yet INCREDIBLY flavorful.
1. Chop all ingredients and hardboil eggs (boil for ~10-15 mins).
2. In a pot, add in your sugar and have the heat on medium until the sugar JUST melts. Then add your pork belly and render the fat (~5mins).
3. Once pork belly has some color, add in your onions and garlic. Stir until fragrant.
4. Add in the fish sauce and the black pepper, stir.
5. Add in the coconut soda and bring it to a light boil.
6. Once barely boiling, add in your eggs and submerge in the liquid. Cover and let simmer on low for about 1 hr 15 min until the pork belly is soft and tender.
7. Add in the dark soy sauce for color and flavor, and season to taste with some more pepper and salt.
8. Serve over rice and garnish with green onions+ sesame seeds. This is also typically served with pickled veggies and chili peppers!
