A meal fit for first class! When a Korean meets a Viet, a Spicy Pork Bulgogi Banh Mi is born. This fusion sandwich features marinated pork bulgogi, quick-pickled carrots and daikon, and fresh vegetables on a crusty French baguette.
1. Slice pork shoulder into thin strips and combine all marinade ingredients (gochujang, gochugaru, 3 tbsp sugar, soy sauce, minced garlic, grated ginger, salt, pepper) in a bowl. Marinade the pork for 30 minutes to 4 hours in the fridge.
2. To pickle the carrots and daikon: Boil 1/4 cup sugar and rice vinegar until the sugar is dissolved. Pour this hot mixture into a heat-safe bowl with the prepared matchstick carrots and daikon.
3. Once your meat is done marinading, cook it on medium heat until fully cooked through.
4. Assemble your sandwich: Spread Vietnamese butter or mayo on the French baguette, then layer with the cooked pork bulgogi, pickled carrots and daikon, cilantro, cucumbers, and jalapeños. Enjoy!
