Inspired by the Korean shrimp pancakes from @hernameishan, this recipe aims to recreate the delicious flavors and textures of a beloved dish. While not an exact replica, it offers a damn delicious alternative.
1. Clean and chop your green onions to about 1-2 inch sections. You can go smaller or longer if you want.
2. Butterfly your shrimp by laying it flat and running a sharp knife down the middle.
3. Combine all ingredients (except the shrimp) and thoroughly mix to form a batter.
4. Preheat a large pan with some vegetable oil.
5. Tap a tiny bit of batter in the pan and if it sizzles, immediately spoon in batter and gently push it to desired shape. You can also make mini pancakes.
6. Place the butterflied shrimp on top of the pancake right after you finish shaping the pancake, and once the bottom turns golden, carefully flip and cook the other side till golden.
7. Slice into 8 pieces and serve with a dipping sauce made from soy sauce, 2 tablespoons water, lemon juice, sesame oil, and gochu garu.
