Phở Đuôi Bò, or Oxtail Pho

1. Clean and parboil meat/bones. Add a few tbsp of salt to boiling water and boil your bones/ meat for 15 mins. Drain and rinse.
2. Add bones and meat back to pot and fill with water until fully submerged. Bring to a boil and let simmer for 3 hours.
3. Add in the aromatics (onion and spice bag) after the 3rd hour, and let simmer for another 3-5 hours (the longer the better obviously).
4. Once the broth is done, discard aromatics and excess bones, then season with fish sauce, rock sugar, pepper, and let simmer for another 10 mins.
5. Optional but I like to do this: let the broth cool and refrigerate until the fat conglomerates at the top. Use a spoon to carefully remove the fat.
6. Assemble the bowl and dive in!
