A homemade recipe for Mì Xào Giòn, or Crispy Bird's Nest Noodles, based on a Vietnamese mom's traditional eyeballed measurements. Features stir-fried protein and vegetables with a flavorful sauce, served over uniquely fried crispy wheat noodles.
1. Prepare the sauce by mixing soy sauce, dark soy, chicken seasoning, sugar, oyster sauce, water, sesame oil, and flour until combined, then set aside.
2. Stir-fry your chosen protein and season with salt and pepper. Remove once it's about 80% cooked and set aside.
3. Stir-fry your chosen vegetables until they are tender to your liking, seasoning lightly with pepper.
4. Add the protein back into the pan with the vegetables and pour in the prepared sauce. Let it simmer until the sauce thickens.
5. For the noodles: Separate your fresh noodles into nests; typically, one package is split into 8 nests.
6. Heat up oil until very hot. You can test by dropping a small noodle in; it should puff up instantly when ready.
7. Fry the noodle nests until they turn a nice yellow, then flip and continue frying until golden.
8. Strain the fried noodles and let them sit on a paper towel to drain excess oil.
9. Serve the stir-fried protein and veggies with the thickened sauce over the crispy noodles. Enjoy! (Note: You can also use regular noodles instead of crispy ones for a delicious stir-fry noodle dish.)
