Bò kho, not baka silly 🐰🥕

1. Cut and marinade meat with the marinade ingredients above (3 tbsp soy sauce, 2 tbsp oyster sauce, 2 tbsp hoisin, splash of fish sauce, 1.5 tsp bo kho seasoning) for 30 minutes to overnight. 
2. Start on the broth: in a lightly oiled pot, add your aromatics (lemongrass oil and garlic) and gently cook until aromatic. 
3. Add your ginger and sauté for 30 seconds then add your beef and lightly brown. Then mix in your tomato paste.
4. Add the rest of the broth ingredients (sliced onion, 3 star anise, 1.5 tbsp Bò kho seasoning (optional), 2 tbsp dark soy, 1 tbsp fish sauce, 1 can cocorico or coconut water, water to cover all ingredients (~8 cups), salt + pepper to taste) and bring to a simmer and cook for about 1.5 hours on low. Add just enough water to submerge everything.
5. Add the carrots and let simmer until beef is super tender and carrots are cooked through. This will take 10-30 minutes depending on your texture liking.
6. Serve with bread and fresh herbs.
